Banana Oat Pancakes
*vegan *gluten free *WFPB no oil * If you’re not a fan of bananas just omit them, this batter is fantastic without them as well! You will need: 2 cups oat flour 1 tsp baking powder 1 tsp baking soda 1 tbsp egg replacer 1/4 tsp salt 2 tbsp maple syrup 2 mashed ripe bananas 1 cup soy milk 1/2 cup water 2 tsp vanilla Mix well and spoon onto a non stick pan. Cook on low heat until golden brown and flip. Enjoy! Peach Nicecream
When peaches are in season these are a nice treat. Frozen peaches are a great substitution. You will need: 3 fresh peaches halved 4-5 frozen bananas sliced In a high speed blender or food processor blend the peaches until smooth. Add frozen banana slices and blend on high until creamy. Garnish with crumbled walnuts. * If using frozen peaches start with fresh banana or 1 cup of plant-based milk to get things moving in the blender or food processor. Makes 4-5 cups Enjoy! Raw Apple Pie Oatmeal
1 cup Steel cut oats soaked overnight 1 chopped pink lady apple 4 pitted medjool dates 1 tbsp maple syrup Pinch of salt Dash of pure vanilla extract Cinnamon to taste 1/2 cup of water Combine ingredients in a high speed blender. Blend on low speed until warm. Serve with fresh apple slices and a sprinkle of cinnamon. Enjoy! |
