Oatmeal Flax Cookies
*oil free *vegan *low fat *gluten free 2 cups oats 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1/2 cup packed brown sugar 3 tbsp ground flax seed 3 tbsp ground sesame seed 5 tbsp whole flax seeds 5 tbsp whole sesame seeds 1/2 cup unsweetened coconut flakes 1/2 cup unsweetened apple sauce 1/4 cup maple syrup 1/2 cup semi sweet (dairy free) chocolate chips Bake at 350 F 20 min or until golden brown on parchment lined cookie sheets. Turn off oven. Flip over and let bottoms dry out in the turned off oven.

Banana Date Oatmeal Cookies
*vegan *sugar free *oil free *low fat *WFPB *gluten free Preheat oven to 350 F Ingredients: 3 large or 4 small coarsely mashed bananas (make sure they are not too ripe). 2 cups quick oats 6 tbsp ground flax seeds 1/2 tsp salt 1 1/2 tsp baking powder 2 tsp vanilla 8 Medjool dates pitted and chopped In a bowl mash bananas and mix in the rest of the ingredients. Spoon onto parchment lined cookie sheets. Bake on parchment lined cookie sheets for 20 min. Turn off oven. Flip and let bottoms dry in oven for 20 min afterwards. Enjoy Soft Chocolate Chip Cookies
Soft melt in your mouth vegan chocolate chip cookies. No egg replacer. These are not WFPB (but they are healthier than regular chocolate chip cookies as they have no saturated fat or cholesterol). Prep Time 5 minutes Cook Time 13 minutes Servings 24 cookies INGREDIENTS
INSTRUCTIONS Preheat oven to 375F In a large bowl blend everything together on high (except flour and baking powder) until smooth. Add flour and baking powder. Mix on medium speed until blended. Add chocolate chips. Roll the dough into 2" balls and flatten with your hand onto parchment lined cookie trays. Bake 12-13 minutes. Cookies will look uncooked but take them out and let them cool. *For a crispy cookie bake longer. Vegan Sugar Cookies

INSTRUCTIONS Sugar Cookies Preheat oven to 400 F For the cookies: 1. In a bowl add all the ingredients except for the flour. 2. Beat on high with an electric mixer until smooth. 3. Add flour and mix on low until incorported then stop - do not over mix. Sprinkle flour on a clean surface. Roll dough to 1 cm thickness and cut out shapes. Place on parchment lined cookie sheets.
