Zippy Tangy Cauliflower Fiesta Salad
6″ Head of Cauliflower -cut into small florets
1 Bunch of Fresh Cilantro -finely chopped
6 Sundried Tomatoes -soaked in warm water and blended into a purée with some of the soaking water.
2 Ripe Tomatoes -chopped
1 Large Red Pepper -chopped
1/2 Red Onion -finely sliced
1/2 Avacado -finely chopped
1/4 cup Apple Cider Vinegar
2 TBSP Tamari
A sprinkle of: chilli powder, garlic powder, cumin, chipotle powder & nutritional yeast & salt
Mix well in a large bowl. This can be great meal to prepare a day ahead as this keeps well overnight!
