Easy Baked Smoked Tofu Slices
*flavourful tofu slices *vegan Prep Time: 4 minutes Cook Time: 40 minutes Passive Time: 4-6 hours INGREDIENTS
INSTRUCTIONSPreheat Oven to 375 F Tofu: 1. Cut block of tofu and cut into approx. 1 cm thick slices. 2. Place onto a parchment lined cookie sheet. 3. Mix sauce ingredients and spoon a generous amount on top of each slice (I found there was enough sauce for two packages of tofu). Refrigerate the left over for your second batch). There is no need to flip these pieces or coat both sides, the flavour will fully penetrate the tofu. Bake 40 minutes and remove from oven. Now the tofu will look a little dry that's great. The real magic begins in the refrigerator. Place in a sealed container and refrigerate minimum 4-6 hours, overnight is even better. Enjoy these slices on their own, on a sandwich or as a salad topping. The possibilities are endless!

Crispy Potato Cakes
*fat free *vegan You will need: 6-8 cups of mashed potatoes 1 bunch chopped green onion 1 tbsp onion powder 1 tbsp garlic powder 1 tsp salt 1/4 tsp black pepper 4 tbsp nutritional yeast 1 tbsp vegetable stock powder *if using left over mashed potatoes you might need to add flour to thicken it so they won’t fall apart when dipped in the cornmeal batter. 1 cup corn meal 1/2 cup soy milk 1/2 cup water 1 cup panko bread crumbs 2 tbsp nutritional yeast 1 tsp onion powder 1 tsp garlic powder. 1/2 tsp basil flakes 1/8 tsp black pepper Bake @ 425 40 min or until golden brown. Tip: Make smaller into nugget sized patties and experiment with different dipping sauces. Chipotle Black Bean Chilli
*vegan *low fat *high in resistant starch *oil free You will need: 4 cups cooked black beans 2 cups cooked chick peas 1 large cooked sweet potato or yam chopped with peel (don’t throw it away, there’s good nutrition in the peel) 1 cup frozen corn 1 can whole tomatoes chopped with juice 1 onion chopped 3 chipotle chilli peppers in adobe sauce 2 tbsp maple syrup 2 tbsp chilli powder 2 tbsp nutritional yeast 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp smoked paprika 1 tsp chipotle powder 1/4 tsp black pepper salt to taste Mix ingredients in non stick pan and cook until heated through and flavours combined. After scouring the small town we live in & visits to over 4 grocery stores. I decided it might be a little healthier (not to mention yummier) to make my own pasta. This is an incredibly simple recipe too, one that yields impressive results. You will need: 4 medium russet potatoes -baked, peeled and finely mashed (do not blend). 2 tbsp nutritional yeast 1/2 tsp salt 1-2 cups all purpose flour Knead flour into potatos, keep mixing until a soft, non sticky dough forms. Divide into 8 balls. On a floured surface roll out each ball and slice into 1″ pieces. Add gnocchi pieces in small batches in salted boiling water. Remove with a slotted spoon once they float to the surface. Set aside. At this point you could just add a sauce or you could take it to the next level and saute in a non stick pan on med low heat. Sprinkle with salt, pepper and dried basil. Add your favourite sauce. Voila! Gnocchi perfection sure to impress almost anyone! Makes 4 servings. |
