Home Made Gnocchi
After scouring the small town we live in & visits to over 4 grocery stores. I decided it might be a little healthier (not to mention yummier) to make my own pasta. This is an incredibly simple recipe too, one that yields impressive results. You will need: 4 medium russet potatoes -baked, peeled and finely mashed (do not blend). 2 tbsp nutritional yeast 1/2 tsp salt 1-2 cups all purpose flour Knead flour into potatos, keep mixing until a soft, non sticky dough forms. Divide into 8 balls. On a floured surface roll out each ball and slice into 1″ pieces. Add gnocchi pieces in small batches in salted boiling water. Remove with a slotted spoon once they float to the surface. Set aside. At this point you could just add a sauce or you could take it to the next level and saute in a non stick pan on med low heat. Sprinkle with salt, pepper and dried basil. Add your favourite sauce. Voila! Gnocchi perfection sure to impress almost anyone! Makes 4 servings.
